“You too” is correct and “You to” is incorrect. “Too” means the same thing as “also” while “to” is a preposition and part of an infinitive verb in English 

I like coffee.

You too! I adore coffee!

We need to use “too” because we want to reciprocate and say the same thing back to someone who makes a statement. 

Too vs To

To is a preposition and part of the infinitive of a verb.

I am driving to the bank.

I need to eat right now.

Too is an adverb that means “also” and “excessively”.

I miss you too.

I ate too much ice cream. 

You too or You to

We use “You too ” when someone else has the same opinion or has performed the same action as we have.

I dream of going to Thailand one day!

You too! That is my dream!

You too or Me too

We usually use “me too” to show that we have also performed the same task. We use “you too” to place more emphasis on the fact that something happened to the other person.
